Turning harvests into meals

The aroma of simmering vegetables filled the Ray County Library as attendees gathered for a recent Community Connections program focused on cabbage, greens and creative ways to make use of seasonal produce.
The event was part of the ongoing Community Connections series, an initiative led by Special Needs Services (SNS) that focuses on teaching families affordable, creative ways to use seasonal ingredients while encouraging healthy eating and community engagement.
Ray County Library Director Stacey Hisle opened the program with a demonstration of an Instant Pot cabbage soup recipe that combined cabbage, ground beef, potatoes, carrots, onions and tomatoes into a hearty one-pot meal. As she prepared the ingredients, Hisle emphasized the recipe’s flexibility and encouraged attendees to adapt it to their own preferences and dietary needs.
While the original recipe called for riced cauliflower, Hisle explained she prefers using potatoes, noting either option works well…
