Composting education grows across Missouri communities
When Katy White first began teaching sustainability, she wasn’t motivated by science alone but by something far more personal – watching good food go to waste while knowing many families struggled with food insecurity.
“As a grade school educator, I have witnessed food insecurity,” said White. “When we put good food in the trash, that just doesn’t make sense. Helping people to understand the simple ways to reduce food waste seems very sensible. Obviously, we generate food waste when we are preparing food and putting that in a plastic bag to send to a landfill, where it will rot and create methane gas, which does not make sense to me. This motivated me to share the options available for food waste, such as composting.”
