Field to Fork is a new weekly recipe series from Project Guardian, featuring simple, healthy meals using fresh produce from farmer’s markets or Harvesters boxes. Recipes are provided by Ashley Thompson, Project Guardian community health worker, and are designed to help families make the most of seasonal, affordable ingredients.
Sweet Potato & Black Bean Hash (Serves 2–3) This hearty skillet meal is packed with fiber, protein, and fall flavor. It uses just a few ingredients, cooks in one pan, and costs under $5 total.
Ingredients 1 medium sweet potato, peeled and diced 1 small onion, chopped 1 clove garlic, minced (or ¼ tsp garlic powder) 1 tbsp oil (vegetable or olive) ½ tsp cumin (optional) 1 can black beans, drained and rinsed Salt and pepper to taste Optional: chopped spinach, bell pepper, or a fried egg on top Instructions Sauté sweet potato: Heat oil in a skillet over medium.
