Field to Fork
Field to Fork is a new weekly recipe series from Project Guardian, featuring simple, healthy meals using fresh produce from farmer’s markets or Harvesters boxes. Recipes are provided by Ashley Thompson, Project Guardian community health worker, and are designed to help families make the most of seasonal, affordable ingredients.
COTTAGE CHEESE FLATBREAD RECIPE:
1/2 cup low-fat cottage cheese
1 large egg 1 Tbsp grated Parmesan cheese
1/4 tsp garlic powder DIRECTIONS:
1. Preheat oven to 350 degrees Fahrenheit.
2. Blend the ingredients until smooth.
3. Spread the mixture out into a rectangular shape on a parchment lined baking sheet.
*Mine measured 8”x10”.
4. Bake for 30 minutes or until slightly browned.
5. Let the flatbread cool for a few minutes before removing from the parchment paper.
